How long did it take? Like if I make it through lent with the 80-20 I probably won't go back?
I think the hardest things to kick will be cheese and desserts. Seems like there is a good substitute for dessert, but the thought of an omelet without cheese makes me sad. Maybe it will be my 20!

I did not eat 1 single carb (outside of fruit and veggies) for 1 month and day 31 i ate some pizza and had the worst stomach ache. It still happens to this day (about months later).
Now when I eat a lot of carbs (pizza, fried chicken etc) I have the coffee poops(I know TMI)

Frankly, I still each cheese sometimes. I usually say I follow a mostly-paleo or paleo-esque diet, because I still have some cheese. Not much, but some. I haven't found it negatively impacts me in any way.

I'm not Paleo but I am Vegan, and cheese was a tough one for me to give up. I am not overly familiar with Paleo, but look up some vegan cheese recipes if you are interested. Nutritional yeast gives the cheesy flavor and the bulk of the sauce is usually nuts or white beans.
