Quinoa and Boiled Crawfish Salad (w/pic)

Does not sound like a great combo, but may I just say it is AWESOME? (I posted the pic in the leftover boiled crawfish thread, but in case y'all missed it: (I'm shameless) Lots of flavor of the boil in the salad as I peeled the boiled crawfish over the cooked quinoa so that juices would flavor it (as well as crawfish fat).
quinoa
boiled crawfish (peel the crawfish over the cooked quinoa so that all the juices fall into the bowl)
arugula
diced red onion
pine nuts
taste for seasoning (I didn't really need to add any as the crawfish were highly seasoned)
Stir it up, chill and eat. (Twice as good the next day.)

very interesting. i bet the "boil flavor" is great. I would destroy this.

Quinoa is a high protein grain-like seed. I cooked it in my rice cooker, using chicken stock in place of water. It's a little bland on its own but takes well to other seasonings.
You could use it the same way you'd use rice, like with gravy over it. It is NOT carb free, just more nutrient dense than rice. (I mention that because I'm always watching my carb intake.)

Never eaten Quinoa, but that looks really tasty. I'd imagine boiled shrimp would work well too?
