Duck Breast - what to Do

I picked up some frozen duck breast from calandros this week, with intentions of smoking them.

I've never cooked duck breast before.......anyone have any recipes....tips....tricks?

Bossflossjr had an incredible recipe for duck breasts a week or so ago. Search his posts and see what he did. They were wild ducks, but the same should apply.

He pan seared them, so this doesn't help in your smoking idea. The duck tits looked unreal nonetheless.

They are dark meat and somewhat greasy...remind me of chicken thighs.
I like the ole cliche bacon and cream cheese

Maybe in a crock pot with some au jus?

Whole breasts or breast filets?

I like to take the breast filets, rub them with olive oil, salt, pepper and garlic powder, and grill them to medium rare. This is wonderfulness with a wood duck.

I did :( they went to a house where one guy had a pet chicken (decided against chicken man) the pet chicken rides with him in his truck.

I gave this guy my whole coop, the two bitch chickens and mr peepers. The bitch chickens have already attacked his one eyed pet chicken, so now they are to stay in the coop. Mr peepers plays with the one eyed chicken and is allowed to roam.

The bitches are good layers...gave him an egg each with in 2 hours of being there, so he will keep them.

Well there ya go. My idea is simple but it is good.

I also like to add them to a stir fry, get the veggies going and when they are nearly done add the sliced breast. That is good too.

You cook em slow on the grill or real hot and sear em off fast?

Do you shoot for a certain internal temp or just wing it?

I wing it. Bathe them in pimentón, kosher salt, pepper, cinnamon.

Pittsburgh style (super high open flame, a touch of carbon on the outside, bloody on the inside).

Slice as close to paper thin as possible, serve with a lightly sweetened blackberry, boysenberry, or wild raspberry jam. Many will recommend a sour orange marmelade, I´m not a fan, in comparison to wild berries which aren´t bathed in sugar.
