Generally, yes.
If you had an unusual amount, say 10 loaded pistols, they would have probable cause to start asking questions.
If you exhibit any questionable behaviour, they have probable cause.
But as a matter of law, open carry in a vehicle is legal.

My mom got pulled over some years back for speeding by a state boy, she told him she had a .38 in the car. He flips his shite, secures the weapon, empties all the cartridges in the floor board and acts like a total arse the whole time. Little prick wrote my sweet mother a ticket for 4mph over.
