Non-starter/nickelback at LSU and went on to have a great career with Pats/Saints.
I was going to until I looked up that he started 20+ games over his last two seasons.

SENIOR SEASON (2005)
Starter at cornerback for the Tigers ... Played and started all 13 games for the Tigers in 2005 ... Led Tigers and ranked among the SEC leaders with eads the Tigers and ranks among the SEC leaders with 11 pass breakups ... Finished with 54 tackles, 41 of which were solo ... Intercepted 1 pass, that coming in win over Mississippi State ... Had 2 tackles and 4 PBUs in win over Vanderbilt ... Posted 6 tackles and 1 sack for a 3-yard loss against Arkansas ... Forced a fumble to go with 6 tackles in win over Appalachian State.

Tory james was a guy who started but seemed to underachieve at LSU. Never would have guessed he'd have a 10 year career.
There were a couple of tight ends that fit this description too. They may have been on the field a lot, but ended up with surprising NFL longevity. I'll try to think of their names and edit them in.
Kevin Mawae shocked me too. Might have had my head up my arse during that era, but I never thought he'd achieve the level of NFL succes he did. Another similar Center was Todd McClure

Ben Wilkerson was a Tiger. Was an All American center at LSU. Played for the Bengals then Atlanta. 3 or 4 career. Is new OL coach at Grambling.

Yes, i used to talk to him at a bank I worked a decade ago.
He played with the Steelers and wasn't a big name during his time at LSU.

PLayed under Josh Booty not Tyler. Stayed in the NFL longer than Booty and Davey.
