Thanks for the replies so far. My kids have purchased Shun knives for me so I'll be sticking with that brand. I'm ordering a honing rod so I'll have it around when it is needed.
I know I want the carving set. I do use a carving knife several times a year. It seems from the responses that I should be looking at general all purpose knives.
