Anyobe know the specific type of winter grass or wheat the cattle ranchers or farmers plant? It seems like it is low growing and does not get high like traditional winter wheat I'm used to seeing.

This needs to go to the Outdoor board for serious answers.

Probably rye but even still, there are different varieties. I haven't planted any in years and don't remember the recommended ones. Check the LSU Ag page.

I know in some places they plant wheat and graze cattle but pull the cattle early in the spring (or late in the winter) to let it head and cut it.

Where in west Texas? Here in Oklahoma winter wheat is planted in the fall, then they turn out feeder calves on it and graze it til spring.
