Traditional football playoffs work by the logic that if you beat someone, you are better than the teams they beat
Except that doesn't work. It's invalid. You can point out numerous examples EACH year in both levels showing the flaw.
And it's made even worse by the fact that football is a complex sport. It's very possible that you can beat a team you can schematically match up well against, who in turn eliminated a team that matched up well against you.
A single elimination playoff does NOT crown the best team of the year.

You're right, it determines the best team that day. Every sport in the history of man has always been like that since the first olympics, except college football. The fastest runner ran a bad race and lost in the gold medal round but he had the fastest qualifying time, its called sports.
