I had a Vietnamese fish dish yesterday cooked in a clay pot that was amazing. That's what I would make. Unfortunately, I don't know how.
I'm only being partly smartass. If you have Asian cooking abilities, that might be an idea.
A colleague with me had a bitter melon dish that was good. But you better like that stuff.

I usually turn to rasamalaysia.com for Asian recipes
I haven't been on there in a while. I'll look into it if I can find a fish that won't kill me
