What about baby bok choy?

They have a store nearby with this stuff. Any idea on how to prepare that?

I had a Vietnamese fish dish yesterday cooked in a clay pot that was amazing. That's what I would make. Unfortunately, I don't know how.

I'm only being partly smartass. If you have Asian cooking abilities, that might be an idea.

A colleague with me had a bitter melon dish that was good. But you better like that stuff.

Chopped, lightly stir fried with onions(onion first), and a drizzle of a basalmic vinagrette.
