When is the earliest crawfish is available? Ive heard end of November and December any truth to this for people in the know?

Sammy's normally starts early. Had them last December for sure.

Depends on the weather, but some will start pulling them in late November. Restaurants might start serving them early December. They really don't get "good" until at least January IMO.

It varies but I've seen them in November, restuarants usually don't start serving til after Christmas though.

Year round but you probably have to get them from California about this time of year.

I had them at my place in Baton Rouge and couldn't really tell any difference. They look exactly like our crawfish.
Biggest problem was trying to sell them during times when local crawfish isn't available. Most people thought they were chinese so I had to show them the live ones before they would try.

I can definitely taste a difference but it's been years since I tried them.....and yes trying to sell people crawfish in Sept does throw up a red flag.

i wouldnt imagine at that time of year, (sept.) now,,,, those ca. bugs are very cheap, right?

Nope they are typically higher than ours (freight associated with getting them here) and they tend to have more dead ones in a sack because fo the freight time to get them here. The guy I used to get them from trucked them from California to here in his own trucks I believe.
