Beer Battered Speckled Trout?

I caught a whole bunch of specs out of Venice and wanted to try something a little different.
I usually just do the whole egg wash and Louisiana Fish Fry, but i was wondering if anyone had any good recipes for a beer battered fried trout?
Is that even supposed to go with trout? If not any ideas on what to do with these specs?
I've already cooked all of my redfish on the halfshell

I don't think a beer batter on trout would be very good, but it might be worth a try.

I haven't done beer battering on fish, but if you're looking for a little change, try a panko crust, or trout meuniere or amandine.

Oh yea, i forgot about that. I did use John Besh's Trout Amandine recipe and it was good. Arnaud's has a good one as well.
Yea, I didnt think a beer batter would be used a whole lot so i was wondering if anyone had any success with it.
Does anyone have any variations on frying the trout?

Dredge them in corn starch, then buttermilk, then seasoned Panko crumbs. Then pan fry in an inch+ of oil, flipping once. Drain on a rack . Good stuff.

I don't have a recipe. But OMG this reminds me of a time when I was at this fish fry. This guy (neanderthal) was making this beer batter for the fish. What did he have in his hand? That's right some bud light or miller type "beer" thing. I fought the urge to gag, then called all my bros to assemble. "ASSEMBLE BROS!" is what I yell. Ronnie runs over first and immediatly sees what going on. Ronnie cuts loose on the redneck sheep dude, "hey broseph, you making yourself a mass produced swill batter over there?". I crack the F up. By this time Dave is on the scene. Dave chimes in "Hey broham, have you no more respect for the fishes than that? It's one thing to rip them out of their cosy little underwater abodes and run a knife thru their bellies, but now you have to cover them in horse piss as a final insult". We all got the biggest F'n kick out of it. Dude didn't know what to say. Finally I was like, "have funny eating your BMC shitfish by yourself Larry the Cable Guy". And we rolled up out of that bitch.

Make it a "watery" batter and it should do the trick as it will not turn out "puffy and cloying" when done.

And,fwiw, if you want to experiment with batter frying fish, for the love of God, practice on something other than specs. Go get a few catfish filets and play. The recipe I gave you above gives a very crispy, crunchy piece of fish...do it...do it!

A beer batter is pretty good provided it's not real thick and seasoned well.
I prefer just using club soda. Most beer batters are too dark. It should be like a crepe batter.

One time, at the fish camp, we started to fry fish and didn't have batter. We crushed up a bunch of cheetoes and doritoes and mixed with some corn starch and battered the fish. It was pretty damn good.

Tried this tonight. Had to use flour instead of corn starch but it came out terrific. Crispy golden crust. Thanks for the tip !
