It's not how hot it gets, it how low it goes. Simmer burners make or break a nice range. At least one or two eyes should be simmer burners that go down down to a few hundred btus.

Blue Star makes a 22k burner too. Simmer burners are different, even though they get up to the same btu as the others.

tell me more. is this like for melting chocolate or something?
i haven't really notice an issue with the ability to go low on heat but i'm not a gourmet chef either.

I like dual fuel, but you really can't go wrong with all gas.
Dual Fuel just gives you more baking control and an easier to maintain temperature.

I saw an ad in the Advocado today that Scardinas has a beast of a stove for 3,200 that would require a bit of a different venting system for a home. But it is as I said a beast. It comes with six burners, a griddle, a salamander, and two ovens

For My Jenn Air, it uses a fan at the bottom of the oven so I had to run new ductwork as well as a 50amp 220v service to it. But it is nice to be able to Blacken Redfish inside, having two vents .
