I re-read your original. You'll probably like the Ken Onion the best if you have larger hands. The bolster is very comfortable. You could probably hold it like a sword if that's your style, but it's made to be held "choked up" near the blade.
I cut all sorts of shite when I bought mine. I went through the fridge looking for crap I could slice and dice.
