I think im gonna do a brisket for the game and i want to try a different recipe. I'd like to cook it low and slow for 12-15 hours. TIA

What is the recipe you have tried?

Low and slow on big green egg is what I do or I'll braise it in the oven from time to time.

Boiled like Tujaques. Good. Different.

Well, the time would be dependent on size, so that will only work if you have a 9-10 lb brisket.

Typically, it's lbs. X 1.5 @ 215-225 degrees.

Smoke for 4. Foil and into over for the rest. Once foiled, it's pretty hard to over cook if you keep it ta 250 or under. You can do like ribs and place back over heat if you want to dry the outside a bit.

Smoke it with mesquite or pecan wood for as long as you can take it on low heat (240 to 265) is optimum for a brisket smoking of 12 hours or so.
