Vegetarian Recipes: Help me out if you have made any of these dishes!

I have officially finished the last bit of animal flesh in my house (I always seem to have frozen meat of some sort since i llive alone and cook for one).
Now that I have cleaned the freezer out, I want to go on a bit of a meat fast. There's a few dishes that I want to try cooking, but I am overwhelmed with the different recipes online. So, I want the food board to help me and point me towards any recipes they have tried and love for the following dishes.
meatless chili
aloo gobi (indian potatoe and califlower
hummus
lentil soups (or other soups with legumes)
anything with eggplant
vegan soups w squashes and coconut milk
Over the last few months, Ive cut back on meat. I will never live the life of a vegan or vegetarian, but I do want to cook more meatless dishes. feel free to post anything. Ive been gleaning a lot of dishes, but i just havent found any recipes i like for the dishes above.

Lemon Juice, really a 'to taste' sort of thing
1 tablespoon of Tahini (key ingredient)
Olive Oil
Garlic (optional but I love it)
Salt
Throw it beans and tahini in blender. Slowly add Olive oil until you get a decent consistency. Add lemon juice and season to taste. Let chill for an hour or two in the fridge. Serve with warm pita bread.

how much oil do you usually use. you cook like my mom. it makes me switch. im counting calories these days. lost 25 lbs. trying to lose 25 more. i need measurements.

Just had a Lebanese cooking class last night. Highly recommend tabbouleh and grape leaves. You can put ground lamb in the grape leaves when your resolve weakens.

You won't be using too much oil. It's really a preference of consistency. Measure out 1 tablespoon at a time and see if the consistency and texture is to your liking.
If you are worried about weight, sub pita bread for carrots, celery or zucchini (raw zucchini and hummus is bangin')
By all means have a little pita bread but just mix it up with the veggies.

i eat it with red peppers since they are high in iron and peppers up your metabolism.

I LOVE grilled portabello in the place of meat.
Whole Foods has this sandwich that is portabello, goat cheese, pesto, and roasted red peppers. Whatever bread they use is outstanding as well.
I could become a vegetarian in a heartbeat if I tried. I rarely eat meat.

that sounds delicious as well!
my advice is blend the two cans (one drained) and the tahini first and then get a feel for the consistency. then add oil, lemon, and your seasoning.

If I didn't have to feed a husband, I would eat mostly veggies with some poultry.
Pastas with tomatoes and mushroom
Salads-lots of salads with sensation dressing.
Roasted tomato soup with grilled cheese
Any and every kind of roasted veggie
Veggie fajitas
Pitas turned Into pizzas-I eat these for lunch alot
Kabobs with veggies
Brushetta-with tomato but also other non traditional kinds
Roasted eggplant with mariners
Summer squash and cheese soup
Spel check acting up but u get the idea.

the bean recipe is awesome if you sub black beans... I'm not a huge fan of sweet potatoes, and I'd rather just have bean burritos with that

I don't know what is on the Panera Meditteranean Veggie sandwich, but if I was going veg, I'd start with learning how to make that because it is fantastic.

HUMMUS
can of garbonzo beans with the liquid
3 cloves garlic
1/4 t red pepper(maybe more)
salt to taste
1/3 cup olive oil
4 sprigs fresh flat leaf parsley
1/3 cup Tahini paste
2T of lemon juice
Put everything in a food processor except the olive oil. Blend until smooth, adding the olive oil slowly at the end.
