I make mine like tuna tataki in sushi restaurants. (little soy, teriyaki, dab of worchesture, liq smoke, dales.) marinate for ab 10 min (fin taught me the acids from the marinade can actually cook the tuna) (my buddy adds some tiger sauce.. Have yet to try it but I'm sure it's good). Season the outside lightly with some Paul proudhonmes seafood magic. Put a little butter in the bottom of a hot skillet and sear that dude for about a min and a half on each side.

If it's fresh, all I use is olive oil, salt and pepper (maybe some sesame seeds, too). Give it a splash of soy and a side of wasabi rice and that's all you really need.

Is it all YFT steaks or do you have some BFT? If you have some blackfin, boil it in crab boil then make tuna salad

you can do it with YF also but its too good by itself to make salad with IMO

Soy sauce and wasabi powder... marinate for 1-2hrs. Take out, really coarse ground (or smashed) black pepper on both sides. cook on high to rare.

This. Cook in cast iron for about 40 seconds on each side on the hottest temp. I can possibly get the skillet...
ETA: Instead of a little soy sauce as mentioned above, I use a little ponzu...

This...I also rub a little chopped garlic on the tuna steaks.
