How does a restaurant run out of nearly 50% of the items of the menu, and 75% of the menu off the nightly specials at 7PM?

Surprised to hear that with Pete Vasquez as the chef. He posts on the Tom Fitzmorris forum if you're interested. He's a crusty fellow, but his reputation for food is top notch.

You really should call or write to the owner. I think his name is David.
He has been trying really hard to get the place moving in the right direction since he hired a new fantastic chef. Took a chance by branching out and changing the menu big time to try and create a better place. Pissed the blue hairs and ice tea drinkers off something bad, but I'm glad they made the switch.

Red snapper - fish on the specials menu.

I don't know what it was. I know of David. I don't know if Pete wasn't present or what the deal was.
I had high hopes for this place with Peter taking over.

Yeah, def. let Pete know. I have eaten there three times and have had a great experience each time.

For a restaurant that is competing with so many great restaurants around the area, you would think the owner would have been running to the nearest grocery to gather some sort of fish or meat to offer customers expecting a decent meal. Unfortunately, they were not phased by having to tell each table that they were out of almost every dish on the menu at 7pm.
Not only were they out of snapper and veal parmesan, they were out of the crawfish appetizer, "only had 1 pork chop left", swordfish was literally frozen with fake grill marks.
Lets just say disappointed is an understatement. Simply unacceptable for a restaurant in one of the best food cities in the nation.
Best part of the meal- watching the different expressions each time someone tried to order a dish and the waitress would smile ear to ear "we don't have that either"

The menu items listed don't even sound like Chef Pete's food. Veal parm, pork chops, and snapper way to mainstream.
A bad eating experience does suck though.

Stellar review may be pushing it, or maybe writing just isn't clear enough. I enjoyed the meal, but there were one or two things that were off.
However, out in the Ridge, pickings are slim. Really wonder if that sort of brash, take a leap of faith and your passport cooking will work long term.
