I learned this tip from Cook's Illustrated. Start with a COLD PAN. Flip the chops when side one is browned, and don't let them go too long on side two. The surface of side two may not get browned, but the meat will be so juicy and succulent, you won't care. Try it, pork chops are cheap, and you won't regret it.
