Dempsey's french fries ...

...did they change from the usual batter box frozen fries to fresh hand cut fries?
Fresh cut is great and all, but it really does NOT work as a to go order. Wife brought me home a seafood box last night, and the fires were an inedible stuck together mess.

The fries have always been absolutely horrible at Dempsey's. I don't understand how they can get them that bad.

Wow grammar police on the food board, now I've seen everything.
But honestly I'm kind of confused about this one.... since "fries" is actually one thing, wouldn't you use "is"?

Don't know if it's fresh cut or not, but regardless, it doesn't sound as if it was the fresh cut as much as perhaps the execution of fresh cut or not fresh cut if they were a "stuck together mess" as you say.
Three things I personally find with the execution of fries that rubs me. First is the lack of blanching properly. This results in soggy fries and also ruins the oil much faster. Secondly is not changing the oil and trying to use one fryer to fry everything in house. And finally, with take home orders, it's the packaging. If you don't cut vents in the styrofoam box or whatever, and it's steaming hot, it's going to become mush after a while.

any french fry, regardless of its perfection when it came out of the fryer, will be an utter and complete failure by the time it is boxed, paid for, and driven home to you by your SO. I would say that holds true for most fried food in general. It just sits and steams in the to-go box.

I don't think that is 100% true. I can get fries at several other places just as far away and not have this issue. I don't even bother to get Dempsey's fries anymore because they are inedible, at least in a go box.

Two things are potentially going on here. One is that they aren't washing the starch off after blanching if they are hand cut fries, and the factories where the fries are made if they aren't hand cut fries are washing them off effectively. This is usually evident right off the bat though as it takes longer to cook the fries and so they become limp and never really do crisp up like they should. Another is that it's not in the box long enough for it to get soggy. Fries done properly should be crisp, and that means the starch has to be washed off properly prior to frying. However, given enough time in an enclosed environment with steam any fried item will become soggy. I know what you're saying potent as I've encountered this as well. I just don't think it's been sealed up long enough for it to become garbage, or perhaps it wasn't too hot to begin with.

Dempsey's fries are pretty nasty...I don't know why they don't just use those little frozen crinkle cut fries like Cane's sells. Those fries seem to hold up pretty good in a to-go order, and they're very tasty.

It doesn't matter if they're to go or not. You can eat a couple of fries immediately after they bring them to the table and they're still an epic fail.

Are they uniform in length, and if so, then they most probably aren't hand cut fries. They just need to fry better it sounds like to me. I have my doubts that they are hand cutting their own fries, but I may be wrong. Just judging from the last time I ate there and their serving green beans out of a can which ticked me off. I find it hard to believe that they would hand cut fries, and serve Sysco canned school cafateria style green beans at the same time, but then stranger things have happened I suppose.

For everything I feel they do well, which is the majority of the menu, the fries are a huge disappointment. I used to get them with cheese to make them more palatable but finally just wrote them off altogether.

Dempsey's most definitely hand cuts their own fries. I wouldn't say they're "inedible" even when stuck together. They still taste good, just depends whether you can only eat crispy fries and not like soggy. I personally am not a soft fry fan and Dempsey's has soft fries, but IMO they are still good. Normally I don't think many fries hold up in to-go boxes very well unless they are not handcut.
