what foods are truly Cajun?

other than boudin and hog's head cheese, I can't really think of any foods that are originally Cajun. Jambalaya, gumbo and etoufee were all modified by the cajuns to make it their own in a sense, but are there any foods that the Cajuns came up with themselves?

Rice and gravy.

Seriously, try telling someone from any other part of the country about that and they will cringe. IDK why.

Also, a cajun stew is MUCH different than a stew up north.

Agreed. & they probably cringe because they think gravy comes in a jar or a packet. They have no idea how to brown meat & make gravy but once they taste it, they sure know how to eat it!

I'd have to say stuffed smoked pounce would probably fit in that catagory of "original" Cajun. I know other cultures use the stomach & do stuff it but I don't know if any other culture makes it the way we do.

word, crawfish for sure, but etoufee is not cajun originally, just the addition of crawfish.

actually just looking to be educated. I couldn't for the life of me think of more than a few dishes that were originated by the cajuns

hard to say what you mean. probably every dish ever made was modified by somebody else.

boudin and hogs head cheese are clearly from the french, the cajuns just added/subtracted stuff. samea s jambalaya.

before there were cajuns, native americans ate them. romans ate them. it's eaten in plenty of countries today.

this is at least partially true.

let's put it this way then, boudin was 'created' by the cajuns the same way jambalaya was 'created' by the 'creoles.' a pre-existing dish existed and they adapted.

Really the cajuns did the same thing with jambalaya if we assume they took it from the 'creoles.'

cajun jambalaya : creole jambalaya :: creole jambalaya : paella :: cajun boudin : 'french
boudin'

but then what do we really know? you had a lot of germans around louisiana as well. and the french do make sausages, but germans are typically more known for their sausage making.
