sweet potatoes are so stinkin good

What's your favorite healthy way to cook them? I've just been baking them diced with a little EVOO and rosemary. So easy and so delicious

have one baking right now. gonna eat it with some porkchops, veggies and apple sauce. IMHO FWIW WFDT

When I am lazy, I just poke holes and microwave them. They are frickn delicious.

do you put applesauce on the sweet potato? If so, how do you combine them? Just put it on top or warm it up together somehow?

im just heating some up on the stove as a side, i don't usually put anything on my sweet potato, except maybe some of the onions i'm cooking with the porkchops.

I like to do baked fries. Hand cut into thick french fry shapes and coat with extra-virgin olive oil, kosher salt, freshly ground black pepper and thyme. Place a rack in a sheet pan and roast at 400 for about 35 minutes. They always come out perfect. Perfect side for a decadently fat burger.

One thing I've learned is that I definitely need a better knife because these suckers are tough to cut

Try this!

Cook 3 slices of bacon in a cast iron skillet until crisp; remove and set aside. To the bacon fat, add a mixture of green and red peppers and chopped onion; add a bit of olive oil if needed. Add 2-3 cups of diced raw sweet potatoes (about 3 sweet potatoes) and some minced garlic. Season with salt and pepper. Saute, stirring frequently, until soft and browned. Crumble bacon and add; stir in 1/4 teaspoon of dried thyme. Taste and adjust seasonings. Serve with two over easy fried eggs on top.

They are, but a trick is to microwave them for like three or four minutes.

I used to make a mashed sweet potato and top with a little butter, cinnamon, and fresh grated ginger root.

You could always 86 the butter if you're looking to make it leaner

Been wanting to test out sweet potatoes into my diet, just wasn't sure how to cut some of that sweetness. I absolutely LOVE potatoes, though.

I love to wrap them in aluminum foil and toss them in a fire. Spread butter on them when you take 'em out.
