What's the old saying, something about months ending in R?

What month do you usually stay away from them?

It's best to eat them in months that end in "er." September - December. But if you eat them in Jan. or Feb. you're okay. March is a little late though.

I've always been told to just avoid oysters with a purple-ish tint

That was back in the day. You can consume them year round now.

I think the invention of the refrigerator helped the oyster eating industry.

It's really not good to eat them all year round. They are best in colder months. I'm not sure why but I've tried them in different times of the year and they are best between September and February.

meh about the refrigerator bit. A lot has to do with the temperature of the water they grow in. the warmer the water the more chance of a bacteria to grow in the oysters. So it is still safer to eat them in the winter months.

Yes, per the Northeast Fisheries Science Center

quote:

Is it safe to eat oysters during the months without R's?

Yes. Fresh oysters properly refrigerated are wholesome and nutritious throughout the year. They spoil rapidly at high temperatures, however. The belief that oysters were unsafe to eat in May through August arose in earlier days when refrigeration was less prevalent than it is today.

The pasteurization process makes them ok to eat in the warmer months.

LSU helped invent the low heat pasteurization process in 1995.

Didn't know about that. I'm just used to eating them in the winter and frying them in the summer.

Yep. You can get sick from eating oysters in ANY month. The pasteurization methods help reduce your chances across the board.
