Middle Eastern cuisine............

I rarely hear this type of cuisine discussed here. What are some of your favorite dishes....???

I just close my eyes and point to something random on Lebanon's menu and eat it.

I really prefer persian cuisine over middle eastern .......Persian seems to have more delicate flavors and use much more complex ingredients......

I generally like any sort of Iranian or Lebanese cuisine that I've tried. I'm not the best on the names of the different dishes.
I find most Iranian food is typically some sort of Kabab served with saffron basmati rice and some grilled veggies. Nothing spectacular but usually pretty tasty.
I've tried a couple of the different eggplant based dips and such from Iranian cuisine as well.

Actually your iranian dishes or much more complex than the rest of middle eastern cuisines except maybe morrocan.....The mainstays are the kabob dishes served with rice dishes and grilled tomatoe, but if you venture into their stews you enter another level....

I'll keep that in mind. I didn't see any stews at the Persian place here on Vets. I know there is another one on Magazine but I haven't made it there yet.

if anyone here hasnt tried harissa do yourself a favor and pick up a jar from whole foods or fresh market....its a north african chili paste.

what is that????? you seem to be pretty knowledgable about this type of food....Did you spend some time in the area??? My limited knowledge consists of just me being a road warrior and having a passion for food.

I've heard of it but I didn't know you could get it at Whole Foods

i've always wanted to compare israli vs other hummus. they take it pretty seriously
not sure exact names, but i love their stews with raisins, lamb and other things and a good piece of fire cooked bread. amazing
oh, and Kibbeh. That's by far my favorite

It's crushed, dried, aleppo peppers...has the sort of sweet, raisin quality that sun dried tomatoes have but with a slow, warm heat. Put it on hummus, foule, whatever you'd like really.

Harissa can be used in or on most anything it is used as a table condiment in your north african countries like we would use hot sauce. I know they carry it at fresh market....not sure about whole foods....I have never made my own, but the recipes i have looked at are really simple.
