But I don't know what the hell I feel like doing with it. Boneless skinless. Suggestions?

chicken alfredo... just do it simple
get some Guidry's onion mix, cook it down in olive oil. When they're cooked down at the cut up chicken breast seasoned with Tony's. Let that cook down and add some sliced smoked sausage. Let all that cook down then add some Rotel! 10 min later add a can of alfredo sause and 3/4 jar of H2O. Start cooking some bowtie noodles the whole time. When theyre done and the meat sause has cooked for a while mix and let cook some more uncovered.
TADA!!!! 45 min or so and taste awesome
You can also add mushrooms

Sounds like a winner.
But I might do fettuccine noodles. Like them a little better. Thanksha!

Grilled Chicken Salad.

Half it, grill it and then top it with onions, bellpeppers, and pepperjack cheese. Put it on your fav bread w/ some mayo. I like focacia sp? or wheat bread toasted.

Wrap the breast around black forest ham and swiss cheese. Melt butter in your baking pan, season, and bake.
ETA: another easy one- season breasts and put in baking pan covered with spaghetti sauce, top with mozzarella/parmesan and serve over pasta

Since no one said it yet, i'll go head and do it....
Butterfly them, then STUFF 'EM WIT CREAM CHEESE AND JALAPENOS, AND WRAP 'EM IN BACON!
If you wanna kisck it up a notch, drizzle it with a sauce made from ro-tel, cream of mushroom, and velveeta.
Seriously, i like to go the simple route and season em wit some Tony's, throw em on the foreman, and slice it up over a salad. Auntie Buck likes to butterfly 'em and stuff 'em wit cornbread stove stop. Sounds redneck, but its hella good.

Pull the meat off and bake it with McCormick's Tomoato Basil and Garlic marinade. Put on a Hawaiian bun with shredded lettuce.
