Need a creative idea re: jambalaya

I've got a huge bucket of Chicken Sausage Jambalaya from Rice & Roux (f/k/a Jambalaya Shoppe). I bought it for a SuperBowl party and it ended up being WAY too much.
I live alone and don't want it to go to waste. Also, there are no homeless people in or near my community.
I'm tired of eating it as is. I'm know that rice, chicken, and sausage are ingredients that would be good in a gumbo or soup. I just don't know how to get it from it's present state into a delightfully soupy state.
Any ideas?
Cooking experience: Intermediate but roux experience is only basic

should have let your guests take some home
I guess you could always freeze it

Yeah, I should have. Just didn't think about it.
I probably will freeze some of it but would like to do something creative with the rest.
I guess I could just look for a chicken/sausage gumbo recipe and just add the ingredients to the roux or something.

I had a lot of dirty rice left over a while back and was curious if I could fry it up like boudin balls. I looked online at boudin ball recipes and it seemed like it would work. But the dirty rice had ground beef in it and not chicken and sausage so

quote:With leftover jambalaya? Think about it for a minute or two...please. What will happen to that rice simmering in a roux and stock? A damn gummy mess will appear. That's what. Freeze some and use the rest to fill an omlete or a tortilla. Or, you might add some beaten egg to some of it, roll into small balls, go back through an egg wash, bread it and fry it like a boudin ball but for the love of God, don't think you can make a damn gumbo out of it.

Boudin balls is an interesting thought...
I could take out the larger portions of chicken and fry that up in just a matter of minutes. Thanks!

See, that's why I came here first

Omelet/tortilla sounds great. Thanks!!

One bowl of jam heated in microwave.
2 eggs fried over easy placed on top of jam.
Mix and enjoy.
As for soup, Bad idea unless you can get the meat sans rice.

Agree with Otis on the gumbo. That would be a disaster.
Buy some nice bell peppers, clean out the insides, stuff them with the jambalaya, eat a few and freeze the rest.
OR, have some friends over for dinner, this evening and serve it all up.
Have no idea is the balls will work, but since you have it, you could experiment. If the chunks of meat are too big, though, this could also be a disaster.

Best idea I've ever heard of for this dilema was to run through grinder and into a casing to make a jambalaya boudin. I haven't tried this but I believe read it here at some point.

quote:Works well for red beans and rice, too. I love to put them in a tortilla, roll it up, and give it a quick run through the oven.

THIS is an excellent idea. I have some bellpeppers right now. I'm snowed in today, so I can have this for dinner tonight!!
thanks

Yeah, I'm liking the boudin ball idea. I'll be able to separate the rice easy enough to forego the use of a grinder. Thanks!

Your tortilla idea inspired me. Just in the time I was gone I took some, removed sausage, and put rice and chicken in tortilla, added lettuce, cheese, refried beans, and made it all into a quesadilla served with side of salsa.
I'm eating it now and it's excellent.

I have made a big jambalaya before and had leftovers. I always take the extra add a little water and made fried Jambalaya Balls with them. I like Zatarans Fish Fry Seasoned Batter. I spice mine up a little with some Tonys. The key is making them stick. Once you have figured that out they are amamzing.
I have also tried the stuffed bellpeppers method too. Stuff the bellpeppers with jambalaya to the top. Then take some crushed bread crumbs and parmasean cheese and make a cap for them. Bake them in the oven until the tops or golden brown and the bellpeppers become soft.

Make Jambalaya Arancine and serve with a smoked Creole Tomato sauce
