I have seen a recipe somewhere for a smoked duck and wild mushroom gumbo that looked pretty damn good.

I've had mushrooms in gumbo before. It taste fine. A few shrooms aint gonna make or break a gumbo..

I would imagine so. They really just absorb flavor. Kind of like putting them in a crawfish boil.

the only thing i'm anti in gumbo is tomatoes. (and that includes velveeta...)

If mushrooms were in large supply for the Cajuns a hundred or so years ago, you wouldn't be able to make a "REAL" gumbo without it today.

Think about that.

well, I after a couple of more glasses of makers & water I decided to add the mushrooms...

they did add more "stuff" to the gumbo, which I liked...every spoonfull was just loaded with meat, rice, and vegetables...basically added heartiness to the pot....

the addition of the mushrooms also made the gumbo look nicer in the bowl...just the sight seemed to add a little classiness to the dish...

on the other hand, the mushrooms added a little earthiness to the dish, but as expected, didn't change the flavor a lot....I could definetly taste them before and after, but I'm not sure someone who wasn't looking for the flavor could have picked it out....

something that was really strange was that the addidion of the mushrooms took up much of the seasoning in the gumbo...I actually had to add quite a bit more seasoning after adding the mushrooms...

overall, I'd say that if you already have the mushrooms or want to make the dish appear a little more classy, add in the shrooms...but I would not go out and buy mushrooms especially to add to a gumbo if appearance is not important...

what about sauce piquante? are mushrooms in there a new thing?

To each his own...as the lady said when she kissed her cow...RIGHT ON THE MOUTH...but potato Salad is THE gumbo side dish. Just sayin' so don't be hatin'!
