grits from scratch

used about 1-3/4 cups coarse grits and 1/2 gallon milk. seasoned with salt, red pepper and a little steen's to fight the bitterness of the corn. added a block of sharp cheddar.
first off, should've used half the cheese
probably would've had better luck with sugar instead of the cane syrup.
Someone hook me up with some advice.

As much as I hate him, Emeril's smoked cheddar grits are slamming. My wife makes them one every few weeks, and they're stupid good.
For the Smoked Cheddar Grits:
6 cups water
Salt
1 1/2 cups quick cooking or old-fashioned grits (not instant!)
1 cup milk
1 cup heavy cream
4 tablespoons butter
6 ounces grated smoked white Cheddar
Freshly ground black pepper
In a large, heavy saucepan bring the water to a boil. Add a generous teaspoon of salt and the grits and stir with a wooden spoon to combine. When grits thicken, add the milk, cream and butter and return to a boil. Reduce heat to a simmer, partially cover the sauce pan and cook for 45 minutes to 1 hour, until grits are very tender, smooth, and creamy-thick. Add the Cheddar, season with black pepper, and stir until cheese is melted. Serve hot.

Did not use any butter. Cant believe I didnt think of that...

Zea Rotisserie And Grill's Roasted Corn Grits
2 cups chicken broth
2 cups heavy cream
1/4 stick butter
1 cup golden corn
1 cup yellow grits (Do not use instant grits.)
To grill corn, shuck off husk. Lightly butter corn cob and grill over charcoal or open fire until slightly blackened.
Cool corn and cut kernels from cob with sharp knife.
Bring chicken broth to a boil. Add heavy cream and return to boil.
Slowly whisk in the grits and then the corn.
Reduce heat to a simmer and cook 5 to 6 minutes.
Add salt and pepper to taste.
