Best recipes for cooking red fish

I have some red fish that I'm looking to cook tonight. Any good recipes I should try?

it's jacked from jon false's cookbook but still pretty good

but I season mine with Red Rub and put on grill. shells down. then, when the meat is firm, spread some Pig Stand BBQ sauce on it..let it cook for 5 more minutes. take off grill and serve hot

This is the best recipe you will ever have. It might sound weird but it is great.

Take your reds. On the half shell. Cover the fillets in mayo. Then spinkle a ton on parmasean cheese on them. Then sprinkle with garlic powder and Tony's. Slice some lemons and put 3-4 lemon slices on the fillets. On top of the lemon slices put a slice of butter. Put on the pit until the cheese starts to turn golden brown. It is the greatest.

I know it sounds weird as shite but thats what makes it. It cooks out but keeps the fish extremely moist and rich.

Yup, cook over indirect heat and you'll have a masterpiece. Why the hell can't you get this at a restaurant?!?! It's so delicious and has such a great presentation value.

Half shell vote here. I press garlic and then sautee in butter. Season fish with Tony's and put over medium fire. Baste with garlic butter several times, and squeeze lemon juice near the end. A baked potato always lays down and makes sweet love with the fish. Damn, I wish I could get some fresh red fish here in TN.

Blackened- sprinkle with Zatarain's Blackened Seasoning and blacken in cast iron- awesome!!

This is what you do..Take the redfish, find your garbage can. Throw the fish in the garbage. Then go to the store, buy two 2in. prime ribs with a nice bottle of red wine. Season to taste. Grill to your liking. Enjoy your dinner with someone special. Hope you like my recipe...

Until blackened became the shite in the 80's with k-Paul I had never heard of that form of cookery. I still think to this day they burnt some shite and an idiot Yankee said that's good eats.

As many times as I have cooked redfish on the half shell, I have never tried actual BBQ sauce-it doesn't overwhelm the fish?
