Fun story about Jim Henderson: He fled to Hoover, Alabama for Katrina. My family was putting on a gumbo dinner at a hotel for refugees. An older couple walks into the hotel and my dad says, "Oh my God, that's Jim Henderson!" So we talked with him for quite a while and he told us that this was their first hot dinner they had since leaving their house. He said it was the best gumbo he had ever tasted. Jim and his wife now send us a Christmas card every year.
