Homemade Salsa?

What do you put in your salsa? Only fresh vegetables or do u use anything canned?
What kinds of tomatoes do you use?
Chop? Food Processor? Blender?

I use canned tomatoes and everything else fresh, but will probably start going all fresh.
I like to run the tomatoes in the food processor until there are no chunks left to form the base, and leave everything else coarsely chopped.
Eta: I use tomatoes (obviously), red onion, jalapenos, cilantro, garlic, and salt. I like to keep it simple.

3 tomatoes red onion
Minced garlic jalapeño
Cilantro ½ a can green chilies
Red wine vinegar salt & pepper to taste
Honey sugar
Juice of 2 limes
Dice 2 of the tomatoes and set aside.
Put the rest of the ingredients in the food processor and blend thoroughly.
Add the 2 other tomatoes and pulse a few times.
If possible, let sit over night.
Minced garlic jalapeño
Cilantro ½ a can green chilies
Red wine vinegar salt & pepper to taste
Honey sugar
Juice of 2 limes
Dice 2 of the tomatoes and set aside.
Put the rest of the ingredients in the food processor and blend thoroughly.
Add the 2 other tomatoes and pulse a few times.
If possible, let sit over night.

I use roma tomatoes. They hold up better and don't turn to mush when you blend them. Fresh ingredients make ALL the difference in salsa. Don't use anything from a can.

saute:
1 cup of onions
1 cup of bell peppers
garlic to taste
1 fresh jalapeno pepper
1/4 cup pickled jalapeno peppers
1/2 tsp cumin
1 tsp chili pepper
dash or two of lemon juice
after onions are soft:
add 2 cans of petite diced canned tomatoes
simmer for 1 hour
after the simmer:
add chopped cilantro to taste
chill overnight
I usually hit it with the hand blender to thin it out a little.
Also, it gets better with age in the fridge.

Dump all of it in a food processor and give it a whirl to your desired consistency. There you have the utility salsa on most Mexican grandmothers' tables.

I know it's not homemade, but the closest thing I've found to it that you can get in the store is Jack's Special Salsa. I think they have them at Winn-Dixies but otherwise it's kind of hard to find. Anybody tried it?
