Not sure what SFP's definition of "freak athlete" is, but for football I would have to throw out Marcus Spears.
Watching a guy his size return interceptions was pretty damned impressive.

he was quick for a 300-lb guy but not mario williams quick. and he ran a 5.0 40

He would be the closest lately IMO. Mike Miley also. I still think the last truly great "freak" athlete in the SEC was Bo Jackson.
