Tiger tailgating

I'm tired of doing the usual stuff for tailgating. Ribs, brisket, burgers, etc. I'm looking for something unique to cook this year. Anyone have suggestions?

I would say less of this is cooked each year than things like jambalaya and gumbo...

I've been thinking about doing armadillo eggs. I'm not a big fan of cream cheese and I have never had them using cheddar.

Bacon wrapped shrimp or steak with cream cheese and a jalapeno pepper in the center.

I have been thinking about doing this....also gonna marinate and wrap up some duck and goose breast fingers to cook the same way....
might also try to char-grill some oysters (a la Dragos)...if I can find some in the shell....

Id say some Fried of Blackened Gator, with some hushpuppies and Cajun Fries, New York Strip Steaks, Baked Potatos, and..............Funyuns! yea man Funyuns.

We do Jambalaya every game. (for the free-loaders)
We add in one other item but never duplicate in one season.
Char-Grilled & Raw Oysters
Gumbo
Fry Fest (Shrimp, Fish, crawfish, Etc)
Grill Fest (Burgers, Steaks, Dogs, Shrimp Chicken, Etc)
Brisket
Roast w/pistolets
Pulled Pork
We add in one other item but never duplicate in one season.

we do a shrimp boil once a year. Have done Cochon de lait for the Arky home game. Gumbo, sause piqauntes, redfish coubillion, fried alligator. This is all in addition to the normal, brisquet, BBQ, Fried Turkey, jambalaya. I am thinking about doing fried chicken with dirty rice, boudin balls, etc once. We spend about 200.00 a game in food.
