I'd be interested too, because shrimp seem to dry out too much in jambalaya.

make your normal jambalaya, then when it's completely done, throw shrimp on top, close the lid, and presto-- 5 mins later, done, sweet, awesome shrimp jambalaya!

dont add it til the end. last thing you want is rubbery shrimp.

Another thing, when making shrimp jamb, take the extra time and take your shrimp peels and make a stock instead of using water, It will make a big difference in taste. If you don’t have time for that then pick up some seafood stock from your grocery store. As stated before add your shrimp the last 5-10 minutes of cooking. I also like to add chunks of firm fish such as mahi or shark. Just me though.

I have a great recipe I have been using for over 40 years, unfortunately we are remodeling our kitchen and am not sure where that cookbook is right now. If I see it I will post it for you.

BTW, now of the info you have so far fits at all.

Give me a bit and I'll get it for you.

any reg jambalaya recipe you like, and like mentioned above toss in the shrimp after cooking when the pot is steaming, covered.

most scrimp jambalaya is disgusting b/c people cook the shrimp for half an hour straight.
