My gf is at Central now...if you leave now and sprint down Royal, you could make it before they close.
Just Italy Deli has a good one, and they may be open until 7pm...I would call.
Nor Joe's closes at 6, as I am sure you are aware.
This Cochon Butcher one seems to have one, and it's open later.

Just came to mind as well: a lot of the suburban places like Mr. Ed's do it at night...I know there are more...Parrain's is open I think late on Thurs-Fri or something like that.
On a side note, Bosco's on the Northshore sells it for dinner as well.

Mo's Pizza in Westwego is open with their full menu (including their muffaletta) until 9pm Monday - Thursday, 10pm Friday and Saturday.
It might not be as good as other places, but it is an option if you need it.
