Fajitas!

Got some chicken and beef marinating for cooking later this afternoon.





Got the peppers and onions sliced and ready to go to.

No, I didn't like the way the avocados looked. I did grab one for slicing.

I'm sure it tasted good. However, next time, try leaving the beef/meat in one piece. I cook to medium or medium rare if you like. Let it rest 5 minutes, then slice it and serve. To me, it comes out even better like that. Also, roast up a whole jalepeno on that griddle and slice when done to add to veggies.

Here you go.......

Cajunates
Fajita Marinade

(for 3lbs. of meat)

1 cup of Olive Oil
1 cup of Soy Sauce
4 Tbsp. of Hot Sauce
3-4 Jalapenos I used 4 and deseeded 2 of them.
1 med. Onion quartered
2 Tbsp. Cayenne Pepper
2 tsp. Meat Tenderizer
2 Tbsp. Fajita seasoning(usually Fiesta brand)
3-4 toes of fresh garlic
1 Tbsp. Smoked Paprika
2-3 Tbsp Liquid Smoke
2-3 Tbsp. Lemon Juice

For spicier flavor sometimes I add one or 2 canned Chipotle peppers and some of the liquid/sauce.

Put everything in a blender and liquefy until smooth and liquidy.
Pour over meat and allow to marinate a good 6 hour to overnight.
Enjoy!

Marinade looks good. I like white 1 Tbsp vinegar in there, too.
