There have been former athletes in other sports come back to be undergrad assistants while finishing up their degree. It's happened several times in baseball specifically.
So there is a route to him being on staff in some capacity while finishing up his degree.

He has a degree from LSU. He earned credits online after he became a pro.

Why He has a degree in Football with a master in NFL. Is he going to be teaching PE with the degree.

Wait, why in the hell does a former Super Bowl winning player need a “degree” to be able to coach? That sounds absolutely ridiculous.

I know things change, and I don't keep up with it much anymore, but a coach is considered, or used to be, a faculty member, wasn't too long ago that coaches taught classes during their sports' "off season"

ETA: according to google, in Louisiana they are no longer considered faculty, but "staff" employees

If Ed Orgeron can get a job as the head coach of LSU then surely Mathieu can get a formal piece of paper to say he graduated from LSU.....
