Looking for any suggestions on places at Disney world that have good cocktails and/or bourbon selection. TIA

Polite Pig at Disney Springs has an amazing bourbon selection. The BBQ is delicious as well.

You talking about the parks? You won't find a good bourbon selection at the parks. Your best bet is to hit the resorts or Disney Springs.
For Bourbon
Disney Springs
Jock Lindsey’s Hangar Bar – Really solid cocktails.
The Polite Pig – One of the best bourbon selections on Disney property. Huge whiskey/bourbon wall.
Wine Bar George – Excellent spirits and phenomenal cocktails.
Resort Lounges
Enchanted Rose (Grand Floridian) – Great cocktails, some quality bourbons.
Trader Sam’s Grog Grotto (Polynesian) – Legendary tiki cocktails, not bourbon-heavy but worth it.
California Grill Lounge (Contemporary) – Strong cocktail program.
Steakhouse 71 Lounge (Contemporary) – Very good bourbon/whiskey selection.
If you're talking about a place to have a cocktail while you take a break from queing and walking in crowds, each park offers a unique experience.
Animal Kingdom - Nomad Lounge is a great place to beat the crowds and the weather. Dawa Bar is al fresco bar with cocktails, beer and wine. Fun spot to stop and sip.
EPCOT - Too many to list but the new GEO-82 was our favorite spot on our most recent visit. La Cava del Tequila is a frequent stop as well as Rose & Crown for Wisky.
Hollywood Studios - is pretty limited. Oga's Cantina is fun but you're there more for the abiance rather than the drinks. BaseLine Tap is mainly beer and wine with a couple of cocktails. Fun spot to people watch. The Brown Derby has an outdoor bar that is a good spot to rest and relax.
Magic Kingdom - is dry besides restaurants, and even those offer limited cocktails. Alcohol is only at table-service spots and limited to beer, wine, and wine based cocktails. I usually smuggle in beer or clear spirits in water bottles.

Tune In Lounge (adjacent to the 50s Prime Time Cafe) is a low key spot to have a drink and relax.

Not anymore. There is a new Pirates of the Caribbean themed bar called The Beak and the Barrel (right next to Pirates). You will need a reservation to get in though.

This is a great list. For the Springs, you can add the Summer House for cocktails. Nice bar overlooking the lake. Boathouse has a bar on the water as well. Morimoto has good Japanese whiskey cocktails.
Being a local, years we get annual passes animal kingdom is where it’s at. Grabbing a couple of cocktails while walking around and letting the kids see the animals before we do the safari or hit a couple of rides is choice.
