South Louisiana Deer Processor

I've used both LeBlancs in Morganza and Benoit's in Addis and been pleased with both. Benoit's will make meatloafs and great sausage...I wish they would make bacon burger. I might ask them this year if they'll just mix mine with ground pork fat and see how it goes.

Tramonte's in BR will make actual bacon burger and pretty good sausages.

how far south? what town or city?

South Louisiana is a pretty vast area without narrowing it down somewhat.

I've used Acadiana Wild Game Processing near Lafayette a few times, he's told me he processes one at a time so I have no reason to believe otherwise. Turn around was quick too, drop off on Sunday and picked it all up on Wednesday, but I didn't have any sausage made. He told me he likes to have everything that's dropped off out of the door within a few days.

Full Rut in Walker does all those things. Smoked Sausage, ground and summer sausage. And it's your deer.

But I guess it depends on what you are referring to South Louisiana.

Bourgeois in Thibodaux is really good. Smoked sausage is amazing.
