How’s the color of my jambalaya?

No Kitchen Bouquet or any other darkening liquid was used.

I placed near the bottom of a cookoff this morning.
Everyone that tasted, it said it had a great taste, including the teams on each side of us that were also competing.

Means nothing in the grand scheme of things but it pisses me off.

Color looks nice. Was there any pork butt in it or just sausage? I would eat it either way, just based on appearance.

Eh. Don’t take it personally. Cooking competitions normally have at least one of the following:

Very strict rules and/or judging based on a perceived preference.

Judges that don’t really know what they are judging (like “local celebrity”judges)

Popularity contest (people that know or invite the most people get them to vote for their dish which insures their win)

Did the cookoff specificy how much rice, meat, etc? Not seeing any meat other than sausage, just curious what ratio of rice to meat you used.

Yes
5lbs pork butt
5lbs smoked sausage
5lbs of long grain rice
You could add any type of seasoning that you like, but you couldn’t substitute or add any other kind of meat.
