Haven't really done a whole lot of real cooking in a while but today I decided to cook some chicken fricassée and candied yams, warmed up some petit pois peas, and grilled some Kartchner's boudin. Short of making some homemade bread it was a fantastic meal.
Of course it started with a nice roux!
The boudin I picked up a couple of weeks ago when I was in Krots Springs.
The boudin on the Keg. I tossed a couple of dog biscuits for Rip on there. He loves smoked/grilled meats!

Threw together some pasta. No real recipe
Parmesan and egg yolk slurry. Sautee some Italian sausage then add a bit of pureed tomatoes. Add in half cooked pasta, add pasta water to emulsify and continue cooking the pastas. Turn down heat and addd in egg yolk and Parmesan and add a bit more pasta water. Toss to emulsify and thicken a bit.
