Had some crunchy rice in jambalaya today

I made a big ole batch in a 10 gal pot. Same way I always do. Pretty much following poche Gonzales recipe and using the calculator ratios. Don’t recall this ever happening before really.

But maybe once in every 5-6 bites, I had a crunchy piece or two. It wasn’t burnt pieces from the bottom, as this happened towards the top and middle of the pot. Assuming it’s just some pieces that didn’t cook all the way through? The rest of the rice was cooked perfectly.

Any ideas of what may have caused it?

I assume you turned it. So it was rice that was prob at the top during the cook

I almost have mine down to where I get very little burnt rice on the bottom. It took a few attempts with the new pot setup to get the heat dialed in.

I get mine as low as it can go. Never have burnt rice at the bottom.

Next time, use your normal recipe and proportions, but after your last turn, put the lid back on, and wrap the top of the pot in Saran Wrap. 2-3 good wraps. It will shrink in place and give you a good seal. Then let everything steam for about an hour. Your rice will be perfect.

That won’t melt? My pot is usually pretty hot and is sealed up about as well as it can be.

Oh, it will definitely melt. Don’t do that. What I do is get a can of Flex Seal (must be the clear kind) and spray around the edges where the lid meets the pot. There is no way the steam gets out after that, and the rice comes out perfect every time, baw.

Your fire was too hot after you put the rice in. You depleted too much water before the rice could absorb it.

Ive always thought you wanted to get it back to a good boil for a few minutes after adding the rice to get the rice to “jump”

That’s pretty much how I’ve always done it and don’t recall having this issue
