Jambalaya with leftover shrimp

I have about 2lbs of leftover boiled shrimp in the freezer and I’m thinking about putting it in a jambalaya.
Do you think I should add the shrimp when I add in my rice? Or should I wait until the rice is done and throw the shrimp in? I’m just worried about the shrimp getting tough.
I’ve never had a jambalaya with shrimp but I’ve seen it done. Sounds like it’d be good.

Put them in when you fluff the rice when it’s done.

This. They are already cooked so just defrost the shrimp and toss them in at the end to just heat through and not cook more.

I agree with adding those when you fluff the rice when you cut the fire. I would make the jambalaya with some shrimp in it and add those at the end, or use shrimp stock for the flavor. I make shrimp and sausage jambalaya all the time. Its actually my favorite jambalaya. I always add a couple of bay leaves when I lower the fire.

Depending on size, consider cutting them up a little. Can’t stand a giant rubbery shrimp
