Stuffed Filet

Ok guys. The Filet Minon was on sale at Ralphs yesterday so I bought me one.
My plan is to:
Shoot it up with some seasoning. Stuff it with Onions and Garlic. Sear it on all sides, then throw it in the oven for a couple of hours.
Unless someone has a better idea. I've never tried to cook it like this. So any good ideas are welcomed.

PUT THE KNIFE DOWN!!!
Make a nice sauce with your onions and garlic. Sear both sides, little butter, roast on low temp for 6 minutes, let rest. There is no reason to stuff that thing.

Sounds good for a tough piece of meat like a rump roast, but not for a Filet

Please don't do this unless you want beef jerky. Sear it quickly in a cast iron skillet and then throw it in the oven with a pat of butter on top until medium rare and voila

Thanks. I've never actually cooked one whole. Didn't realize it should only be cooked about 40 mins or so.

If you're doing a whole filet cook to temperature, not time. For medium rare I cook to 110 degrees then remove, cover, and let rest for 15 minutes. After 15 minutes it should be around 130.
