Traveling to this area in a week. Going for a race in Vermont, and decided to tack on a few days for Boston last minute. I have Vermont pretty much done with help from the board. If anyone has suggestions for Boston, I'd appreciate the input.

For Stowe:
For breakfast, you're missing Stowe Bee. It's just a little cafe, and you can grab something and eat there or just take it to go. But I swear it's one of the best biscuit sandwiches I've ever had.
Also, Vermont Coffee Roasters is in between Stowe and Waterbury and it's the best coffee around there IMO.
Other restaurants for lunch/dinner:
Doc Ponds
Michael's on the Hill
Idletyme
The Bench
Stowe Cider (surprisingly good BBQ)
Other things to do:
Ben & Jerry's
Gondola Skyride
Kayak rental
Hike Stowe Pinnacle
Other breweries:
Hill Farmstead (a bit of a drive but worth it)

For Boston:
What restaurants are already on your list? If you don't have a reservation you'd better hurry, and for those that don't take reservations be prepared to wait a bit. You're coming at the busiest week of the year.
Not sure what you're looking to do in the Seaport since you mentioned it, but there's not much to "do" there. You can go to Trillium and Harpoon (get the pretzel) though.
You can go on a whale watching tour or a sunset cruise around the Boston Harbor and see the city from a different perspective.
The most common thing to do is go to the Half Shell and listen to the Boston Pops and watch the fireworks. Have fun standing in line all day though...
Personally I'd rather find a rooftop bar and watch the fireworks from there if I were a tourist here on the 4th.

if you drink beer, Stowe area breweries are some of the best in the world. Go to alchemist if so, and also the tap room at Von Trapp

Would you recommend swapping any of those out?
I'll definitely check out Stowe Bee and Vermont Coffee Roasters. Really appreciate the input!

Personally I'd pivot from most if not all of those.
Lolita is good for Boston, but why go to a taqueria in a city that frankly has shitty Mexican food?
Rochambeau is fine, but nothing really memorable. Plenty of other places I'd steer you towards in a 2-3 block radius of Rochambeau instead (Krasi for upscale Greek and Saltie Girl for seafood are probably the top two in that regard)
Davio's is a chain. A local chain, but still. If you want a Steakhouse experience look at Grill 23 instead. Although I'm of the belief that going to a steakhouse when you're traveling is a waste of a meal because you can go to a steakhouse anywhere (with a few noteable exceptions like St. Elmo's in Indy). But again, that's just me.
Committee is great (but if you go to Krasi mentioned above I wouldn't do two Greek places). I personally would go to Woods Hill which is right by Committee instead.
I'd argue Mamma Maria's or Giacomo's >>>> Trattoria Il Panino, but you're definitely not going to have a bad experience at Trattoria Il Panino.
To be clear, none of the places on your list are bad. They just aren't the places I would recommend to people who are visiting and have limited meals to eat while in town.

For craft beer / breweries, make it a point to stop at Freak Folk and Blackback. Next to TEST and (maybe) Everywhere, Freak Folk is doing the best hazy work right now. Also, Blackback rivals beer bars like Toronado (as an aside, some of the sale updates from this month are interesting) with its lists.
Both places in Waterbury, so easy go from dinner at Prohibition or Stowe.
ETA: Didn't see Alchemist or Hill Farmstead on your list, but will second (and third) the others that made the same suggestions.
ETAx2: Doc Ponds is great, too. Abita threw that on his list. Personally, I prefer wintertime Doc - such a lively atmosphere inside.

I think that's a solid lineup. Only thing I'll reiterate is now you have two Greek restaurants (Krasi and Committee). I love Greek food so I'm not at all saying it's a bad thing, but if you want to vary it up I'd maybe do Woods Hill around the corner from Committee instead.
You won't get dirty looks anywhere with jeans and a polo, but Mamma Maria is a bit more upscale and white tablecloth so I personally would step it up just a bit more there. Same with Krasi to a lesser degree.
For Krasi - see if you can get into their speakeasy Hecate right behind the restaurant. If it's a weekday they might be able to get you in for a drink. Really great spot but no reservations.

One more thing - while you're in the Back Bay, go into the Prudential Center and visit the Treehouse popup.

Stowe Maple Products may be the easiest option. Trapp Family Lodge produces their own syrup and they may have a tour or tasting opportunity during the summer months. The only other place I know where you can sample maple syrup year-round is Maple Grove Farms in St Johnsbury. It a large producer so don't expect small, sugar shack vibes. They do have a museum and you can try all the different grades of syrup plus try some maple candy.
Mt Mansfield is going to be the popular hiking spot. If you have a nice day a hike down to Bingham Falls is fun and a hike from the road. The waterfall is pretty big, and you may see people jumping from the top. I used to go there many years ago for a quick dip.

I know it is much slower, but I lived in Burlington for a job for a bit, and loved the drive through the White Mountains every time. Lots of places to stop along the way.
