Stowe, Vermont in the summer

I'm traveling to Stowe, VT in July for a conference at the Stoweflake Resort. I'd like to stay a few extra days to hike and kayak. I'd love recommendations on things to do, restaurants, shops, etc. I'd also like input on whether I need to rent a car.
I'm also considering going to Montreal since it's only 2.5 hours away. Is there enough to do in Stowe for 2 to 3 days, or should I just head straight to Montreal after my meetings?

was there for the eclipse last april and had a blast. You can easily fill 2-3 days in Stowe/Waterbury
the food (and especially the beer) was some of the best we’ve ever had anywhere. It’s a wonderful place to visit

Yep. I'm sure AbitaFan will be along to give you some good restaurants but Prohibition Pig and Hen of the Wood in Waterbury should be on that list. Hopefully you like craft beer because there is a lot of great beer in that part of the world. In Stowe, Alchemist is a must and Doc Ponds and Von Trapp are also great. If you want to take a scenic drive head to Hill Farmstead Brewing.
I love Montreal but you need at least 3-4 days there IMO. So unless you have the time, maybe skip that. Closer is Burlington which is a great town. I'll be up there in July my ownself.

we ate/drank at all of the above except farmstead and can confirm the recommendations. Superior food and beer at all, and Von Trapp is an extremely cool place

100% correct. The new Hen of the Wood location isn't as great as the old one, but it's still a fantastic meal. I'd also add Michael's on the Hill as a nicer dinner experience. More casual places that I always recommend are Doc Ponds, The Bench, Idletyme, and at Stowe Cider there's some solid BBQ.
A biscuit sandwich as Stowe Bee is also an absolute must. It's just down the hill from Von Trapp. There's also a coffee place between Stowe and Waterbury whose name I can't remember (Vermont Coffee Roasters, maybe?) but it's a huge red building. Can't miss it. Really good coffee.
Breweries are plentiful. If you do rent a car, taking the drive to Hill Farmstead is worth it. But locally there's Alchemist, Von Trapp, Lost Nation, Idletyme, etc. It's crazy how many great breweries are in that small of an area.
