Front Day Keto Recipe Ideas

With front day upon us, typically a gumbo is in order. What are some good low and slow keto recipes conducive to cooking outside, preferably in a cast iron pot. TIA

Smoke chickens for soup- I julienned some cabbage yesterday and boiled it in chicken broth seasoned with taco seasoning to make a sort of southwestern chicken noodle soup, and it turned out pretty awesome for being thrown together in 20 minutes.
Not too many things that are keto and slow cooked since it generally involves a roux. I'm thinking about smothered okra/tomatoes for the Saints game tonight. Okra and tomatoes are both on the higher carb end for veggies, so it depends on how strict you are being and what else you're having with it.
French onion soup is always good, but the caramelized onions are higher in carbs.

Make a jambalaya and instead of adding rice or noodles to make it a pastalaya, add some thin sliced cabbage.

Try using almond flour or xantham gum to create a faux roux.
