what are your suggestions?
we tried some @ japan in epcot last time we went but their selection of rolls left a little to be desired

yeah, we have had some there and it was real good
this year, we are skipping dining there (even though it is one of our favorites) in favor of some new places for us
we are trying the yachtsman steakhouse, cinderall's royal table, coral reef etc

We had a sushi appetizer at Wolfgang Puck's in downtown Disney (not the express one). It was pretty good.
We went to Tokyo in Epcot for the food and wine festival to do a sake and sushi pairing. It was pretty amazing, but they had some special items such as fresh wasabi and wagyu beef from Japan.

The sushi I had at Tokyo dining was the best i've had. They do lack on selection though.
Went last month and these were the places we ate at:
California Grill-great meal and great service, we watched the fireworks from up there
Chefs De France-Awesome food, I had the braised short ribs, they were fantastic and the creme brulee was everything I hoped it would be.
Tokyo Dining- Like I said great sushi, not a huge selection though
Fultons Crabhouse- Great meal, pricey, but awesome. I'd recommend the 3/4 lb king crab claws and lobster tail combo
Shula's Steakhouse in the Dolphin Hotel- Great Steak, awesome serivce, creme brulee might have been better than france. Very expensive though

there is a really good sushi bar in the lobby of the swan resort near the boardwalk ..

Chef Yoshi at California Grill is like the 2nd rated sushi chef in the US for what it's worth. At least that is what they told me when I was there last summer. Chef Yoshi is a female sushi chef too...don't know if that matters or not to you.

Check out Ohana, best Brazilian style steakhouse I've ever eaten out. I took my wife there for the first time in October and was a little apprehensive since she is a vegetarian. However, the chef was able to accomodate her, and really went out of his way to make some spectacular dishes, including a mushroom soup, and some vegetable tempura which I thought was pretty good as well.

we have not eaten everywhere together, but as for the places we have eaten, it takes the cake
the food is outstanding (although not the best), but add in the experience (wishes etc) and it is our favorite
this trip we are going to actually eat chef mickeys in the contemporary instead (but still catch wishes from cali grill) and try places we have never tried before

actually, the sushi bar at the swan (i think the name is "kimono") is the first place i had ever eaten sushi in my life in 2000 ... went back there after the 2006 florida game when i had become more of a sushi afficianado and still thought it was very good ... plus, i love the boardwalk next door with the espn zone and microbrewery as well ..

yeah, that area is real nice
friday we are planning a whole day @ epcot (future world till lunch, coral reef @ 2:30, then drinking around the world till illuminations), but thursday i think we are doing the morning at animal kingdom and the evening at Hollywood (one of the only 2 nights they have fantasmic) so that would probably work out great
take the bus from AK to the boardwalk, eat some sushi, then take the boat to Hollywood

brah .. the ABSOLUTE three best beers i ever had in my life were at the coral reef ... it was hot as shite that day, i was sweating like a mofo and we stopped there for lunch .. i'll never forget it .. i had three ice cold samuel adams lagers .. something about the taste and the ice coldness brings back memories ... and i had a pretty serious little scallop dish too ...
have you ever been to the microbrewery on the boardwalk ?? really is a nice place and the 6 beer sampler is actually pretty cheap by disney standards ..

went once back in 05
my wife and i were walking by and saw on the marquis that Deuce Mcallister was the player/guest that night but it was in like 3 hours, so we went next door and had a few then came back and had front row seats to see the deuce
i must say thought, i don't remember what we had to drink
how is the food at coral reef, i heard it wasn't great
my wife is a vegetarian so i figured we would try it for her, plus i heard the ambiance is cool

We were at Epcot around christmas time and for a lunch/snack I had a salmon, egg, and tomato sandwich from some Norway bakery type of place. The salmon was about as close to 'sushi' as it gets, and it was some kind of good.
