Crunchy Rolls?

I have gotten pretty good at making Sushi rolls. My third try and they almost look like restaurant grade.
Does any one know what the orange stuff on the outside of a crunchy roll is called?
When you ask the sushi chefs in a restaurant they just look at you like you want their first born or something and mutter something I can't begin to understand.

Smelt roe. hmmm. Where can that be purchased? Maxwell's? Whole foods?

i thought roe was the fish eggs that don't really have texture. i thought the "crunchy" stuff was something different all together like tempura...????

i have always found roe kinda crunchy. it you eat it by its self it kinda pops in your mouth when you bite it but has no taste to me

I LOVE that. At Kamado's, their sushi rice (which I get with sashimi) has the roe on top of it. So much fun to eat.

At first I had a hard time getting over the fact that it is fish eggs but now I like it. But it kinda reminds me of pop rocks but without as much pop

Note to self: Only trust Afreaux when he is talking about latin food.....
Orange stuff - definitely smelt roe (fish eggs) and I find them slightly salty if there are too many on a roll.

I'm 100% positive that he's referring to fried tempura batter crumbs, which are orange. If you order the "crunchy roll" at Ichiban, that's what it's covered in. If you do a Google image search for "crunchy roll", all the pictures are of sushi rolls topped with fried tempura batter.

Tempura isnt orange..its kinda golden..and it is in a crunchy roll..but the orange stuff on top is smelt roe seen here

Afreaux is RIGHT...the crunchy stuff that is on the roll and falls onto the plate is NOT roe, it is tempura!

some places call it tempura crispies, others call it fried tempura batter, but it isn't roe
roe also comes on many rolls, but wouldn't be described as "crunchy"
as to what the poster in this thread is asking about, i have no clue....but the crunchy in a crunchy roll is no doubt tempura
ETA- this comment here gave me the impressions he was not asking about roe

The "crunchies" are not what the poster is asking about. He's asking about "orange stuff" which is defintely not tempura bits. I doubt he would have trouble identifying what that is. I'm with the masago posters.
