I have a one night stay in SLC in a couple of weeks and interested in a hotel or ski resort that offer nice mountain views.
Any recommendations would be appreciated.

Everywhere in downtown SLC has great mountain views.
The Kimpton there was probably the nicest and also most expensive.
The Marriott at City Center was probably our favorite.

We had 1 night in SLC waiting to fly out and found The Grand America Hotel is quite the place. I forget the name of the restaurant in the hotel but they had a breakfast and pancakes that were off the charts.

I second the Grand America. Had a fantastic stay there. Really nice property with multiple dining/drinking options on site. Huge rooms. Plenty of nice places within walking distance.
Really enjoyed SLC when I went for a conference. Need to go back with more leisure time.

Third for The Grand American. One of my favorite hotels in the country.

Stayed at the Hyatt Regency Downtown. Had a great pool and nice view of the mountains. Easy walk to a bunch of coffee shops, restaurants, shopping, and bars as well. Would recommend
